The Austrian scarlet runner bean cookbook

The cookbook contains over 100 recipes, from classics such as scarlet runner bean soup and scarlet runner bean salad to scarlet runner bean strudel and various scarlet runner bean spreads. It also includes more exotic creations, such as scarlet runner bean tortillas, scarlet runner bean muffins and scarlet runner bean soufflé. In other words, it provides a host of recipe ideas and showcases the very varied ways in which the “queen of the beans” can be used in cooking.


More than “just” a cookbook
As well as recipes for all tastes the scarlet runner bean cookbook offers something else besides: an introduction to how to cook pulses properly, including helpful practical tips and historical, agricultural and nutritional background information.
In any case, putting the book to the test by trying out its recipe for scarlet runner bean strudel proved a great success.

About the author
The cultural and culinary communicator Taliman Sluga, who used to undertake museum and exhibition work, has been writing cookery books since 2005. In his books the Austrian uses the main topic of eating and drinking as a starting point for talking about historical periods and regional conditions. In 2011 he launched the annual Graz cookbook fair and the Austrian cookbook prize Prix Prato. He has also written a book on European Christmas cooking, which describes recipes, customs and specialities, and books on cooking with fish and cooking with beer in Austria.

Traditional Styrian
stamp press process

While modernity has brought progress in many areas, the traditional Styrian stamp press process is still the best way of making pumpkin seed oil. The main difference between this and other pressing methods is that we work with open roasting pans. At our plant, people check when the pumpkin seeds are perfectly roasted and so will yield the very best oil. This enables our experienced oil millers to produce the pumpkin seed oil that has won more prizes than any other – and which as a result of this type of pressing retains all the natural constituents. The untreated oil is not filtered; the particles that make it cloudy settle naturally when the oil is left to rest.
